Recipe: Ube Fritters / Postre (Philippine Snacks)

30 pieces or more

Ingredients:
1 kilo ube (purple yam) 
15 to 20 pieces ripe bananas
oil for deep frying


Directions:
1. Pare the ube and shred it thoroughly. Slice thickly the ripe bananas.

2. Coat a slice of banana with the grated ube and deep-fry. Before placing another set of fritters, remove completely the cooked ones.

3. Place it in a colander for drainage of oil and serve hot.

Preparation time: 15 minutes

Pasta al Limone

Description:
Mommy Loy's version

Ingredients:
pasta
garlic
butter
olive oil
salt and pepper
lemoncito
parmesan cheese

Directions:
cook your pasta then saute garlic with butter and olive oil. add the pasta, sprinkle with salt and pepper, mix very well. Squeeze a lemon over it or calamnsi if there's no lemon. Then add parmesan cheese. Voila! pasta al limone.

Meat Pies of Mommy Loy

This is very easy, Lou:

I recipe pie crust - divide into 12 sections and press into the holes of a cupcake pan

Filling:
1 cup finely chopped diced ham, chicken or leftover pot roast or turkey
1 onion chopped
1 hungarian sausage or spanish chorizo finely chopped
1/2 c raisins or dried cranberries
1/2 cup finely chopped mushrooms

Saute onion onionuntil translucent. Add the chorizo, ham and mushrooms. Stir for 5 min then add the raisins. Spoon into the pie crust lined cupcake pan.

Beat 2 eggs in a big bowl. Add 1 tbsp flour and beat till well blended. Add 1/2 cup milk and beat some more. Add salt and pepper to taste. Pour into the meat mixture and top with grated parmesan cheese.

Bake for 5 min in high heat then reduce heat to medium and bake 15 min more.
